Cheese Cake

Ingredients: 50g butter (melted) 125g biscuits (blend) 300g cream cheese 35g sugar 150g sour cream 1/2 tsp vanilla strawberry or blueberries  Method: Mix melted butter with the biscuits + 1 tbsp cream cheese,  then put it in a dish - based with baking paper. Press evenly. (set aside) ** Mix sugar and cream cheese with mixer, then add sour cream and vanilla, and mix again. Then pour it in the dish (in the top of biscuits). Add the strawberry or blueberries around, and wrap the dish, then rest it in the fridge over night.

Finnish Munavio - Egg Butter.

Just need to mash two hard boiled eggs with 2 tbsp of butter then add salt & pepper to taste. Enjoy with bread, crackers, or salads 😘😘😘

Finnish Salmon Soup - Lohikeitto.

This yummy soup is very easy to make. First ,  you need to melt 50gr butter in a pot, then add 1 sliced leek and saute till it soft. After that, add 5 cups of fish stock, 1 carrot, and 3 potatoes - bring to boil - and cook for about 20 minutes on medium heat. When you think the potatoes is soft enough ,  add 450gr of fresh salmon cut up into small  chunks,  and 1 cup of cream then cook to boil. After it boiled ,  turn of the heat, add 1 cup fresh dill, salt and pepper ,  then close the lid for 10 minutes .  Enjoy with rye bread!!

Traditional Mexican Rice Pudding (Arroz Con Leche).

I feel like I wanna try to make a dessert, so I searched on Internet and found some interesting article about traditional Mexican dessert. Actually, it's like a rice pudding. But in Spain, they call it  Arroz con leche. And it's sound different and interesting for me. 😆😆😆  When I read the  article, looks like it's easy to make. So I have a look to my kitchen and fridge to see if I  have the ingredients.  Anddd there is some of the ingredients that I don't have 😭😭😭   I'm lazy to go for shopping - 'coz its very windy today in Melbourne.  Buttttt I think I still can make it with the ingredients that I have!  Nothing to worry about. 😆😆😆 So, I change some ingredients, and the way I cooked is a bit different with the article that I read before.  And I  think it's make it simple 😆😆😆 Just keep calm and cook on! 😙😙😙 Sooo - I prepared 1 cup of arborio rice, rinse it twice, then cook it in a rice cooker.  While the rice cooking,

Banana Bread

Ingredients: 3 large mashed bananas Melted butter 1/2 cup 1/2 cup of sugar (1 cup of sugar if you want more sweet) 2 eggs (beaten) Pinch of salt 1/2 tsp olive oil  1 tsp vanilla 1 tsp baking soda 1 1/2 cups of flour. 🍌🍌 Put all the ingredients in a mixing bowl  🍌🍌 Mix all the ingredients. And put it in an oven dish sprayed with olive oil.  Then baked at 180°c for 35 minutes.  🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌🍌 Let it cool for a while and it's ready to eat. Enjoy with your favorite tea ! ☕☕☕ And get ready to make some more !! 😙😙😙

Slow cooker lamb

Ingredients to make a sauce: BBQ sauce 1 cup Brown sugar 1 tbsp Cayenne pepper  1 tbsp Salt 1/2 tsp Mix them all together. Put the lamb in slow coo ker and add the sauce.  Add carrots, onions,  garlic, ginger, rosemary,  And add a little bit of salt and pepper.  And cook on high for 3.5 hours. After 3.5 hours, add broccoli and capsicum,  then cook for 10 more minutes . Enjoy with rice or potatoes.  Note: you can use different veggies if you like*

Mushroom, Pea, and Chicken Risoto

  Ingredients: 30g butter 1 onion (choppeed) 2 cloves garlic (crushed) 1 1/2 cups arborio rice  500g chicken breast (cut into 3 cm chunks) 300g mushrooms (sliced) 1 litre chicken stock 1 1/2 cups peas 1/2 cup parmesan cheese 1/2 cup parsley (chopped) method: Place butter, onion, and garlic in a hot sauce pan and cook until the butter is melted and onion is golden brown. Add the rice and stir for 1 minute. Add the chicken, mushrooms, and stock - stir, and bring to boil. Close the lid and cook for 15 minutes or until the rice is tender and chicken is cooked. Stir occasionally. Add the peas, cheese and parsley. Stir well.  And done!

Peanut butter cake

Today I made a peanut butter cake. Actually it's just an experiment, but luckily the taste is yummy. Hihihi 😆😆😆 And it's perfect to enjoy with your favorite tea or coffee.  Here's how to make it 😘  2 cups of flour, baking soda 1 tsp, salt 1/2 tsp.  Mix and set a side. In a seperate bowl, mix Butter 3/4 cup, sugar 1/2 cup, brown sugar 3/4 cup.  Add vanilla extract 2 tsp, 2 eggs. Mix again.  Add the flour mix from the previous steps that we made at the beginning, and mix again.  Add choco chips or sultanas  1 cup.  Mix with spoon. Prepare oven dish with sprayed olive oil. Pour 1/2 of the dough to the dish. Add peanut butter  1/2 cup and spread it. Add the rest of the dough and spread it. Bake at  180°c for 40 minutes. After 40 minutes. Let it cool for a while,  so it's easy to cut. Now get that nice cup of tea and

Oat Porridge with fruits topping

I made simple breakfast for my sunday morning.  🌻🌻🌻 I just need to cook the oat porridge with milk for a minutes. While waiting for the porridge to be cooked,  I'm  preparing the fruits. This time, I use banana 🍌🍌🍌 strawberry 🍓🍓🍓 and kiwi. When the porridge is ready, I add a little bit of butter to taste, then mix it. After that, add the fruits on top, add chia seeds, some sultanas, and sprinkle with raw organic honey. Yummy and fresh!! 🌻🌻🌻

Easy and Delicious Nutella Brownies

This is a simple and very easy brownie to make. And you only need 3 ingredients! 1 cup flour 1 cup nutella 3 eggs Mix them all together, then pour them in a muffin cup. Optional : Use an almond, cheese, sultanas, or choco chip for the topping. Bake it 180c for 30 minutes. Let it cool for a while, then enjoy!! 😙😙😙

Baked Rainbow Trout

Recently,  I  bought some fresh Rainbow Trout from my local fish market. And this is how I cooked it : Preheat oven to 200°celcius.   Place fish in a large sheet of aluminium foil, and then rub with olive oil. **Remove head beforehand,  if  you can't stand to look at fish head** Season the inside and outside of fish with dill, thyme/rosemary, salt & pepper. Stuff  fish with onion slices, garlic chopped, and grated ginger. **Place 1/2 lemon slice on fish (Optional)** wrap whole fish with foil. Bake in the preheated oven for 45 minutes. Serve with rice and veggies.  The juice is so fresh and yummy   😙😙😙 If you like the taste of steamed fish, then this is just perfect. Enjoy!!
